Your Good Friday Fish Recipe - Saltfish Stewed Peas from Jamaica


Shereen Codner joins Carlene in the kitchen where she prepares the popular Jamaican dish, Stewed Peas with Saltfish.




Ingredients


For 4 people
12 1/2 cups water
2 cups dried red peas, pre-soaked
1 piece ginger, crushed
4 whole pimento berries
3 cloves garlic, crushed
1 packet Grace Coconut Milk Powder
1 cup flour
1/2 cup Grace Cornmeal
1/8 teaspoon salt
1 pound saltfish, soaked and flaked
1 packet Grace One Pot Seasoning - All Purpose
1 whole scotch bonnet pepper
1 medium onion, chopped
2 stalks escallion, chopped
1 sprig thyme

Directions

Pour 8 cups water into a pressure cooker. Add pre-soaked red peas, crushed ginger, pimento berries and crushed garlic; pressure cook for twenty five minutes.
Remove pressure cooker from flame and allow to fully cool before opening. Return to flame and add 4 cups water, Grace Coconut Milk Powder, mix well and bring to a boil.


To Make Spinners:

Combine flour, Grace Cornmeal, salt and remaining water, knead until a firm dough is formed.
Take small pieces of the dough and roll into spinners. Add spinners, flaked saltfish, Grace One Pot All Purpose Seasoning, whole scotch bonnet pepper, chopped onion, escallion and thyme and stir well.
Cover and leave to simmer for 15 minutes or until thickened.

To Serve: Serve with boiled Grace White Rice and a tossed salad.

The General Assembly of the United Nations in its resolution 66/281 of 12 July 2012 proclaimed 20 March the International Day of Happiness. They recognized the relevance of happiness and well-being as universal goals and aspirations in the lives of human beings around the world and the importance of their recognition in public policy objectives. 

Here is the full text of the Secretary-General's Message

"The pursuit of happiness lies at the core of human endeavours. People around the world aspire to lead happy and fulfilling lives free from fear and want, and in harmony with nature.

Yet, basic material well-being is still elusive for far too many living in extreme poverty. For many more, recurring socio-economic crises, violence and crime, environmental degradation and increasing threats of climate change are an ever-present threat.

At last year’s Rio+20 UN Conference on Sustainable Development, United Nations Member States agreed on the need for a balanced approach to sustainable development by integrating its three pillars – economic growth, social development and environmental protection. They recognized that in order to better inform policy decisions, broader measures of progress should complement Gross Domestic Product.

I am encouraged by the efforts of some Governments to design policies based on comprehensive well-being indicators. I encourage others to follow suit. On this first International Day of Happiness, let us reinforce our commitment to inclusive and sustainable human development and renew our pledge to help others. When we contribute to the common good, we ourselves are enriched. Compassion promotes happiness and will help build the future we want."

Many people think they know the symptoms of depression.  But it can be tricky. You can be depressed for a long time without even knowing it. The most obvious symptoms of depression may be well known.  Feeling sad all the time and unmotivated, having thoughts of suicide, and withdrawing from your friends, are the best known signs. But in reality, depression symptoms are much broader than this. 

People do their best to cope with being depressed, and so sometimes you can be in the middle of a rather severe illness without even knowing it.

One of the most classic symptoms of depression, for example, is depressed mental function. A lot of the time, people who are depressed go around in a mental fog all of the time. They may not even be consciously aware they are depressed, but they can't seem to get anything done. Basically, rather than facing their feelings of anxiety and depression, they go into a listless state where they don't have to deal with anything. This kind of escapism can last for weeks, months, or even years.

Be reassured though if you seek help from a therapist or physician, depression can be treated and you will feel better.

Friday Fish Recipe - Blackened Fish - Nice and Easy


Blackened fish is quick and easy: fish, spice, butter, skillet, and—boom—you're done.

Blackening is a cooking technique used in the preparation of fish and other foods. Often associated with Cajun cuisine, this technique was popularized by chef Paul Prudhomme. The food is usually dipped in melted butter and then dredged in a mixture of herbs and spices, usually some combination of thyme, oregano, chili pepper, peppercorns, salt, garlic powder and onion powder. It is then cooked in a very hot cast-iron skillet. This recipe uses a little less butter and it is a bit more healthy.




"I'm using mahi mahi with this dish, but any fish will do. A traditional blackened fish is dredged in melted butter before the spices are applied, which is yummy, but I think the fish does all right with just the spices—we'll save the butter for the pan. Any combo of spices will do. I especially like ginger powder on my fish—give it a try. Use salt, paprika, chili powder, garlic powder, cumin, etc. Coat each side of the fish with as little or as lot of spice as desired.

Heat a skillet on medium high heat and add a little butter. Add a little oil, too. When it's hot, toss in your fish—but not before—the fish should sizzle and cook when it hits the pan. Brown one side with spice and butter and turn halfway through cooking. Light fish will turn opaque when it's done, but don't wait for the fish to be cooked entirely through before removing it from the heat—it will continue to cook even after you've removed it from the heat. Shoot for almost flaky more than flaky. Bon appétit!"

How to Meditate - Beginners Introduction to Zazen


Clear, step-by-step meditation instruction, as practiced at the Hazy Moon Zen Center of Los Angeles.

This video teaches you how to meditate as taught in the tradition of Zen Buddhism. These meditation techniques, known as Zazen, have been passed down generation after generation from the Shakyamuni Buddha.

Hazy Moon Zen Center: Meditation Instruction 

"The Zazen I speak of is not learning meditation. It is the manifestation of ultimate reality." - Dogen 

At the Hazy Moon, we practice classical meditation as taught by the Shakyamuni Buddha and his successors, passed down from India to China, to Japan, to America. The form is simple and enduring.

To begin, you will need a quiet room, comfortable clothes, and a cushion.

Choosing Your Position.

Sit on the forward third of your cushion. The lower body will form a tripod - knees on the ground and the base supported with a cushion, bench or chair. Choose a position you can sustain for comfort and stability.

For the full lotus position, place your right foot on your left thigh, and your left foot against your right thigh.
 
The half lotus position places the right foot on the left thigh and the left foot on the floor against the right thigh.
In burmese, both feet are on the floor, tucked against each leg.

To sit in the seiza position, set the cushion up vertically. The shins lie on either side of the cushion.
A bench can also be used.

When sitting in a chair, place your feet flat on the ground, and sit towards the chair's edge to ensure an erect spine. 

Whatever position you choose, your upper body will be the same.

Place your hands in the cosmic mudra - right palm up against the lower belly. Left atop right, middle knuckles overlap. Thumb-tips lightly touch and form an oval. Use a supporting cushion if your hands fall low or pull your shoulders.

Finding Your Posture

Whatever position is right for you, begin by swaying side to side to center the spine. Elongate your spine by pushing up towards the ceiling then relax. Tip the pelvis forward slightly to encourage the natural curve of your back. Relax the belly and let it protrude.

Ears should be in line with the shoulders, shoulders over hips. Center the tip of the nose over the navel, and tuck the chin in slightly.

Eyes are open, lowered at a 45 degree angle in an unfocused and gentle gaze toward the floor. Look out a few feet in front of you. 

Have a relaxed but alert posture. Take time to set up your body correctly every time you sit.

Breathing

Begin by paying attention to your breath. Let it move naturally, without effort. Count each exhale and inhale, as one and count from one to ten. 

Onnnnne, onnnnnnne. Twooooooo, twooooo. Threeee, threeeee.

Breathe from the lower belly, about two fingers width below your navel. Your breath may be shallow at first. It will deepen naturally with practice. 

Set an alarm for yourself for 10 minutes. You can experiment with longer times. 

It is best to sit every day. 

Count silently from one to ten, one to ten, one to ten. If you lose the count, resume where you left off or go back to one. When thoughts come up, don't engage with them and don't suppress them. Just return to the count.

Relationship violence is a highly under-reported phenomenon. Teens are often reluctant to talk about violence that may be occurring in their relationship because they associate it with love. Prevalence of teen dating violence has been estimated as low as 9% and as high as 57%. The most highly reported statistic is that 1 in 3 teens will experience some form of abuse in a dating relationship.

This video is public service announcement which was created for parents of teens to raise awareness about teen dating violence. Teens in dating relationships can experience issues with power and control. These may be in the form of hitting, slapping, pushing, verbal insults, or more subtle forms of intimidation like controlling behaviors such as the text messages shown in the video.


Patterns of controlling behavior can highly influence an individual's health. Among today's tech-savvy teens, text messages are a primary form of communication, that parents may not see. Text messages can serve as a conduit for abuse and control for teens in unhealthy relationships. With most domestic and teen dating violence, much of the abuse happens in private. If we can talk to teens about dating violence and teach them to recognize healthy relationships, it may protect them from violence in their relationship and ensure safety in their adult relationships.

If you are, or know a teen who has been, subject to this kind of abuse, then talking to a trusted adult is always a good way forward.  Don't think that dealing with it alone is the best way

Today a post from me appears on the UK's premier HR Blog, Discuss HR. Here is an extract 

"First I have to admit to a personal interest here; I am well over sixty. Second, I have to make a confession; I still don’t really know what I want to do when I grow up.

David Willetts, the higher education minister, has spoken recently about encouraging older people take up degree courses. Quite a lot of over 60s take up degree courses already of course – in 2011/12, nearly 2,000 started a first degree. Most of them were with the Open University with “The Arts Past and Present” being the most popular course, apparently.

But a history of art course is not what Mr Willets (who was known as “Two Brains” to my generation of Civil Servants) has in mind. No, what dear old David wants us to do is to “train”, so that we can cope with the pressures we will face as we work “well into our sixties”. His comments follow a government report which has found that the country’s future economic success will depend on the skills and contributions of older workers. One in four people will be older than 65 by 2033.

So we are asked to abandon our studies in art, history, classical studies, English, philosophy, music and religious studies etc and concentrate instead on the skills that will be required at work in 2020.

Dare I say it, I think the very intelligent Mr Willetts is starting in the wrong place....."

Friday Fish Recipes - Scallops with Albarino Wine (Vieiras con Albariño) from Spain

Ingredients:

2 tablespoons of olive oil 
     (Spanish olive oil is suggested, but Italian or Greek works well too)
1 cup diced onions
2 garlic cloves, minced
1/4 cup Albariño wine, plus 2 teaspoons
1 tablespoon of finely chopped jamon 
     (if you cannot find jamon, you can use proscuitto)
2 teaspoons of fresh flat leaf parsley
Sea Salt, to taste
8 scallops
3 tablespoons of fresh bread crumbs 
    

Directions:


1. Prepare the onion mixture.  Heat the olive oil in a pan over low heat.  Add the onions and cook until golden brown, which should take about thirty minutes.  Stir in garlic and cook for 2 minutes.  Add the wine and simmer until the wine has evaporated and the wine is a deep golden brown.  Set aside and allow to cool.  Add the ham and parsley and season to taste with salt. 

2.  Cook the scallops.  Preheat the broiler. Using scallop shells, place about 1 tablespoon of the onion mixture on each shell and sprinkle with salt.  Divide the scallops amongst the shells and sprinkle with the remaining wine and cover with breadcrumbs.  Drizzle with olive oil and broil until the breadcrumbs turn golden brown and the scallops are cooked.  This should take about two to four minutes.  Sprinkle with the remaining parsley and serve immediately.
