Friday Fish Recipe - Ciopinno From Italy




Recipe

Serves 4

Ingredients:


4 cloves of Garlic, Chopped
1 stalk of Celery, finely minced
1 small Onion, finely chopped
2 Tbsp of Fresh Parsley, chopped
2 Tbsp of Olive Oil
Pinch of Hot Pepper Flakes
1 Cup of White Wine
15 oz can of Crushed Tomatoes
3 Cups of Fish Stock
1 pound of Mussels, cleaned
1 pound of Clams, cleaned
1 pound of Shrimp, peeled and deveined
6 Scallops, cut in quarters
Salt and Pepper to taste

Method

1) Add the oil in a large soup pot and preheat over medium high heat. Add the chopped onion, garlic, celery, hot pepper flakes and parsley, season with salt and pepper and cook for about 3 to 4 minutes or until the veggies begin to cook down.

2) Add the white wine and let it cook for a minute. Add the crushed tomatoes and the fish stock. Let the mixture come up to a boil and cook for about 10 minutes, season with alt and pepper.

3) Add the seafood and cover with a lid, cook for about 5 to 10 minutes or until all the shellfish has opened and the shrimp and scallops are firm.

4) Finish with a bit more fresh chopped parsley and enjoy!

Friday Fish Recipe From Seattle - Coconut Maple Salmon Recipe

Recipe - may vary from video

For the coconut maple salmon, you will need

- 1 lb of salmon, cut into two pieces
- 1/2 cup of melted coconut oil
- 1/4 cup of organic maple syrup
- 2 lemons (1 for juicing, 1 for decoration)
- sea salt and pepper to taste

To make the coconut maple salmon:


  • Preheat your oven to 350°F.  
  • Rinse the salmon under cold water and pat dry with a paper towel.  
  • Cut the salmon into two pieces and place in a deep pyrex dish lined with aluminum foil (it’s makes cleanup easier).  It’s very important that you don’t put the salmon on a baking sheet because it’s flat and you want the salmon to absorb the liquids. 
  • Pour the maple syrup and melted coconut oil on top of the salmon…don’t worry if the coconut oil solidifies, it’s normal.  
  • Next squeeze the juice of 1 lemon over the salmon.  
  • Add sea salt and pepper to taste.  
  • Cut thin slices of the other lemon and place on top of the pieces of salmon.  
  • Place the dish in the oven and bake for 25 minutes. 
  • The salmon will be done once it’s flaky and a nice light pink color.
Eat it with something nice and green

I recommend eating this with something green, like broccoli or sauteed spinach prepared your favorite way.

Friday Fish Recipe - Bourride (Fish Stew) From Prevence, France with Rick Stein


Rick Stein shows us how to cook French recipe 'Bourride' (fish stew) at the Good Food and Wine Show 2012. Bourride is a kind bouillabaisse from the French Mediterranean. Fish such as gurnard, grey mullet, and huss are ideal for this dish, as they hold together well during cooking. Feel free to use any other fish that's available; and you could even use some chunks of lobster.




Recipe - may vary from the video

For the garlic mayonnaise

2 egg yolks
1 tbsp Dijon mustard
1 tbsp lemon juice
50 ml vegetable oil
50 ml olive oil
3 cloves garlic, crushed

For the stew

1 tbsp vegetable oil
2 shallots, chopped
1/4 red peppers
1 tbsp chopped celery
1 tsp strands saffron
1 bird's eye chilli, chopped
1/2 orange, grated zest only
500 ml chicken stock
1 x 150 g halibut fillets, cut into chunks
1 x 150 g red mullet fillets, cut into chunks
100 g white scallops
50 g cooked prawns, or shrimps
4 triangles fried bread, to serve

Method

1. For the garlic mayonnaise: in a bowl combine the egg yolks, mustard and lemon juice. Gradually whisk in the oils until combined and thickened. Be careful not to add the oils too quickly or the mixture will curdle, but it is not disastrous if the mixture splits as it will be blended later. Stir in the garlic and season with salt and pepper.

2. For the stew: heat the oil in a large saucepan over a low heat. Gently fry the shallots, pepper and celery until softened.

3. Add the saffron, chilli and orange zest, followed by the stock. Bring to the boil and simmer briefly.

4. Add the fish in the order that it takes to cook, gently simmering until it just changes colour between each addition. Begin with the halibut, followed by the red mullet and finally the scallop and shrimp. The shrimp will just need warming through.

5. Take the pan off heat and drain all the liquid into a blender, reserving the fish in the pan.

6. Blend the liquid adding the mayonnaise a spoonful at a time, tasting as you go. Stop when the mixture begins to thicken - you may not need all of the mayonnaise.

7. Pour the mixture back onto the fish and warm through before serving, garnished with the fried bread.

I've been coaching successfully by phone and Skype for a while now and clients have found it a very positive experience. It always amazes me just how powerful and effective coaching by phone can be.  But lots of people seem to have reservations about trying coaching by phone. 

What phone coaching can do for you!

First of all phone coaching delivers all the benefits that coaching by other methods delivers. 
That is an opportunity to gain; 
Fresh perspectives on personal challenges and opportunities, 
Improved thinking and decision making skills, 
Better interpersonal skills and communication
Increased confidence at work and in your personal life.

There are some special advantages specific to phone coaching.

These include: 
  • Concentration – it if often much easier to concentrate on the issues you want to consider
  • Convenient and Relaxing -  as a client you can be in your own familiar surroundings. I find it is much easier for me to meet a client’s need in terms of time if I don’t have to travel to a venue. I can coach pretty much any time of the day or night which suits my clients.  
  • Clients find it easier to be open – there can be a nice blend anonymity and intimacy when talking on the telephone and that helps people to be more open
  • Time Efficient - there's no time (or money) spent travelling and coaching can be fitted more easily into a busy schedule
  • International Coaching - it really doesn't matter where you are in the world, so long as you have a
    good phone connection and can speak English.
