Friday Feast - Cajun Shrimp and Sausage Jambalaya In this video, Betty (of Betty's Kitchen) demonstrates how to make Shrimp and Sausage Jambalaya. This is a spicy dish that is traditional to the Southern States of the USA. Ingredients: 1 pound frozen white shrimp (31-40 count), thawed, de-veined, and shelled (Betty removes the tails, also.) 8 oz. andouille smoked sausage, cut into ½-inch slices (You may use any type of smoked sausage.) 1 small onion, chopped ¼ cup celery, diced 1 large green bell pepper, cut into chunks or strips 2 cloves of garlic, minced 14.5-oz. can diced tomatoes with garlic, basil, and oregano 14.5-oz can chicken broth 1 ¾ teaspoons Cajun seasoning (You may substitute Creole seasoning, or a blend of your own.) ¼ teaspoon ground red pepper ¾ cup uncooked long-grain white rice Method In a large skillet, saute smoked sausage over medium-high heat, until browned, about 3 to 5 minutes. Add 1 small chopped onion, ¼ cup diced celery, 1 la
